To answer your second question first: There are no 2D histos as far as I 
am aware, but maybe Andy can correct me or might know about workarounds.

As for writing an analysis: I think the instructions in 
http://projects.hepforge.org/rivet/trac/wiki/WritingAnAnalysis
are pretty much up-to-date (both for the latest release as well as 
trunk, don't know which one you are using). Let us know how you get 
along and especially if something is wrong or unclear, such that we can 
update it.
